Poached Chicken Herbal Salad in Radicchio
Winter Chicken Salad in Radicchio Cups
Ingredients:
2 boneless, skinless chicken breasts
4 cloves garlic, smashed
A handful of fresh herbs (such as thyme, rosemary, and parsley)
1 teaspoon whole black peppercorns
1 head radicchio, leaves separated and washed
1 cup Greek yogurt
2 tablespoons Dijon mustard
2 tablespoons apple cider vinegar
1 teaspoon cumin seeds
2 stalks celery, finely chopped
A variety of fresh herbs, finely chopped (such as parsley, dill, and chives)
1 green apple, diced (optional)
Sea salt and freshly ground black pepper, to taste
Instructions:
Prepare the Poached Chicken:
Fill a shallow pot with enough water to cover the chicken breasts.
Add the smashed garlic, fresh herbs, and whole black peppercorns to the pot.
Bring the water to a gentle simmer over medium heat.
