Granola is a sneaky umbrella of “health food” we assume to be nutritious. Yet, if you look closely at nutrition labels, most commercial brands are loaded with vegetable oils, sugar, and possibly rancid nuts and seeds.

This granola is packed with almonds, raw pumpkin seeds, sunflower seeds, and flax seeds to nourish our bodies with the nutrients we need to stay energized and alert. Pecans contain more than 19 vitamins and minerals – including vitamins A, and E, folic acid, calcium, magnesium, phosphorus, potassium, several B vitamins, and zinc.
If you switch it up using almonds, they provide calcium, magnesium, and fiber. Pumpkin seeds are fantastic for our immune systems with many antioxidants, omega-3 fatty acids, and zinc, while sunflower and flax seeds have powerful anti-heart disease properties.
Now mix in 3 scoops of breakfast, and you have packed a punch of flavor, using superior herbs, to a host of vitamins and minerals.
Paleo Granola
2 cups raw pecan
1/2 cup shredded unsweetened coconut
1/2 cup raw sunflower seeds
1 1/4 cups raw pumpkin seeds
3 tablespoons MCT oil or ghee
3 tablespoons @Crucial Four #mbreakfast
1/4 cup molasses or maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon cardamom seeds (optional)
1/2 teaspoon Icelandic sea salt
Fresh blueberries, bananas, strawberries your choice or all of them
Preheat oven 325 degrees F and prepare a baking sheet with parchment paper or a baking liner
In a large mixing bowl, add all nuts & shredded coconut
In another bowl, combine MCT oil, MBREAKFAST, molasses or maple syrup, and spices
Pour the mixture over nuts & combine well then spread the mixture evenly onto the baking sheet
Sprinkle sea salt
Bake 20-25 minutes until slightly golden brown stirring halfway through baking
Remove from oven & cool 10-15 minutes, the granola will harden more as it cools
Store in a container & enjoy for a few weeks
Notes: Use any variation of your favorite raw nuts and seeds. Keep in mind the ratio of wet to dry ingredients for the best outcome when using different nuts and seeds.
Eat this healthy, homemade granola by the handful, or sprinkle it atop your favorite non-dairy yogurt, or plant-based milk, or raw milk for a nutritious, filling breakfast or post-workout replenishment.
